half a small fresh chilli (make it as spicy as you like!)
2 tbsp olive oil
Instructions
Bring a pan of water to the boil and add the
carrots and the salt and simmer until ingredients
have become really soft and mashable. Remove from
pan and place to side. Heat a wee drop of oil in
your pan an add the chilli and finely chopped
garlic clove. Once this is looking nice and golden
add the carrots back in along with the balsamic and olive oil then
mash it all up - i give it a tiny quick blitz too get a really
smooth and rich texture!

Suggestions
Serve on the side of salmon or a nice lamb chop.
