Peel pototoes, boil and drain. Beat the cream cheese; add butter and potatoes and mash together by hand. Put in mixer and add remaining ingredients except 1/4 c. butter and paprika; mix well. Put into casserole dish {spray with olive oil} and top with butter or cheese if desired and paprika.{I leave this out} Bake at 350 for 30 minutes. This can be made ahead and refrigerated until ready to bake, or can be made days in advance and frozen until ready to use. {I like putting in a crockpot and either refrigerate or freeze ahead of time. Easy to take out and thaw, plug in without having to transfer to a dish for the oven. Works great! I double this for a crowd, such as at Thanksgiving time.
