Peel the potatoes and cut them in thin slices. In a pan, put a lot of
sunflower oil at low temperature and put the sliced potatoes in the
oil. Cut the onion thin and put it in the pan together with the
potatoes. Leave all in low temperature for around half hour till the
potatoes are very soft. Be careful not to fry the potatoes!
In a bowl, mix the eggs and set salt and pepper. Once the potatoes
are soft, remove the potatoes and onion from the oil, try to remove
the oil as much as possible. Mix potatoes and onion with the eggs.
In a pan with little oil (from the one used before), put the mix and
let in low temperature for a while. Once the side of the pan is
cooked, then it is time to turn the omelet- put a big dish on top of
the omelet and in one gesture, turn it so the omelet is on the dish
and you can remove the pan. Now, slide the omelet again in the
pan but with the cooked side upwards so the other side gets also
cooked.
Leave it in the pan for a minute and then the omelet is
