1. Preheat oven to 325 degrees F.
2. Generously grease 10 inch tube pan.
3. Combine sugar and cinnamon. Coat inside of pan with mixture
by shaking pan all around until sides and bottom are coated.
4.Beat oil and sugar until well blended. Add eggs one at a time
beating well after each addition.
5. With a spatula, stir in apples and vanilla.
6. Sift together cinnamon, nutmeg, flour, baking soda, and salt.
Add flour mixture to the apple mixture and mix well with spatula.
7. Add pecans and raisins. The batter will be very thick.
8. Spoon batter into pan and smooth out. Lift and drop the pan
on the counter from about 2 inches up. To get out air bubbles.
9. Bake the cake for 1 1/2 to 1 3/4 hours until a tester in the
center comes out clean.
10. Allow to rest for at least 30 minutes before turning out on
cooling rack. Allow to cool completely.
