Preheat oven to 350 degrees. Lightly grease one large or two smaller baking sheets. Set aside. Into a large bowl, sift together flour, cinnamon, salt, instant coffee, ginger and soda. In a second large bowl, cream sugar and butter together until light. Add eggs and molasses, beat thoroughly. Add flour mixture, alternately with milk. Stir in the chocolate bits. Drop by level teaspoonfuls onto prepared baking sheet. Bake until well risen, lightly browned, and firm to the touch about 12 to 14 minutes. As each batch is done, remove from oven and transfer with a spatula to brown paper or wire rack to cool. When thoroughly cooled, store in an airtight container.
