1/2 bag cooked (or 2 cans) black beans, rinsed & drained
3 roma (or 1 can) diced tomatoes (try to get as much liquid from fresh tomatoes as possible)
1 TBS. chili powder 1 tsp. ground cumin
1 tsp. dried oregano
1/2 tsp. sea salt
1/4 tsp. garlic powder
1/4 tsp. pepper
1 large, ripe avocado, peeled and sliced
8 taco shells, warmed
Instructions
In nonstick skillet, saute onion & garlic in oil until tender Stir in beans, tomatoes, & seasonings Bring to a boil (add a little water if needed) Reduce heat; simmer, uncovered, 3-5 minutes (or until mixture begins to thicken) Fill taco shell Garnish with avocado.
