In mini food processor, combine chives, black pepper, pinch of cayenne and 1 Tbl. of oil. Process
to a moist powder. Season pork with salt and spread chive mixture all over the pork. Cover and
refrigerate for 1 hour.

Preheat oven to 350 deg. In an ovenproof skillet, heat 2 Tbl. oil. Add the pork and cook over
moderately high heat for 2 minutes. Reduce heat to medium and cook for 2 more minutes. Turn
pork and cook for 2 more minutes. Transfer skillet to oven and roast for 15 minutes, turning
halfway through.
