1 (15 oz) ricotta cheese or 2 c. cottage cheese, drained
1/4 c. parmesan cheese
3 Tbsp. fresh parsley
6 oz. sliced or shredded mozzarella cheese
Grated parmesan cheese (optional)
Instructions
For sauce, in medium pan, cook meat, onion, and garlic till meat is
brown. Drain fat. Stir in undrained tomatoes, tomato sauce,
tomato paste, and spices. Add 1/4 tsp. pepper. Bring to a boil.
Reduce and simmer 15 mins. Stir occasionally.
Meanwhile soak noodles in hot water until soft. Rinse with cold
water and drain well.
For Filling- Combine the egg, cottage cheese, 1/4 c. parmesan
cheese, and if desired, the parsley.
Layer half the cooked noodles in a 3 qt. baking dish. Spread
with half the filling. Top with half of the meat sauce and half of
the mozzarella cheese. Repeat layers. If desired sprinkle with
additional parmesan cheese on top.
Bake in a 375 oven for 30-35 mins or till heated through.
