Heat large frying pan over medium heat (Electric = 5-6). Add olive oil until it gently crackles. Add Chicken. Allow to brown for 3-4 minutes, flip and brown side two. Set aside
Add onions, peppers, celery to pan, saute until translucent (3 minutes).
Add chicken, and remaining ingredients (hold back the cornstarch until the end). Reduce heat to 3/4 and simmer partly covered for 20 minutes.
Before removing from heat, remove aprox 2-3 Tbsp. liquid from pan. Whisk in cornstarch and return mixture to pan. Stir througout pan and turn heat back to 5 for 5 minutes or until sauce begins to thicken. Add Salt & Pepper.
