Frittata
Dice up four rashers of bacon and one onion
Saute in one spoon of oil/butter in a large frying
pan
Cut up 2 cups of pumpkin (cook in microwave for 2
mins.)
Dice up 1 zucchini. Cut 6 spinach leaves into
shreds.
Add to bacon and onion and stir together
Take off heat and add 1 packet of feta cheese
(crumbled) and 1Ž2 cup cheddar
Beat together 8 eggs, 1Ž4 cup milk, 1 tbsp olive
oil, salt and pepper
Pour over mix in pan. Use spatula to work egg
through mix.
Sprinkle grated cheese over the top. Swirl
barbeque sauce or plum sauce on top
Cook over med. Heat till firm around sides
Place under grill till top gets firm.
Transfer back to element for 5 mins. Back under
grill.
Rotate till frittata is firm right through when
knife inserted
Take off element and leave for five minutes to
set.
