1 32 oz can crushed tomatoes (or tomato sauce for smoother sauce)
2 T EVOO
1/2 yellow onion, small dice
1 medium carrot, grated
2 cloves garlic, grated in
1/2 T sugar
S & P to taste
Fresh or dried basil (10 leaves chopped fresh or 1/2 T dried)
Instructions
Heat a large skillet over medium heat. Add onion and carrot. Saute until onion is translucent, about 5 minutes. Grate in the garlic and cook, stirring, another minute.
Add tomatoes. Stir. Add S&P, sugar and basil. Simmer over low heat for 40 minutes. You can add a beef boullion cube for deeper flavor or leave it alone for a fresher tasting sauce.
