-Combine onion, lemon juice, sugar, 1/4 cup H2O, 1/2
tsp. salt and 1/4 tsp. pepper in medium bowl, set
aside
-Pulse dill, walnuts and garlic until coarsely
chopped
-With motor running, slowly add EVOO
-Transfer dill pesto to large bowl and stir in lemon
zest, salt and pepper
-Add chicken and toss to coat
-Drain onion and squeeze dry
-Drizzle tomatoes with EVOO and salt and pepper
-Put lettuce, tomato on bread, then top with chicken
salad and onion and serve.
