3-4 chicken breasts (bone in, skin on, about 3 1/4 lb.)
Instructions
-Preheat oven 450 degrees
-In glass pan, put 1 tbs. EVOO and put lemon
slices in single layer on bottom
-In large bowl, combine 1 tbs. EVOO, lemon juice,
garlic, salt and pepper
-Add green beans and toss to coat
-Using slotted spoon or tongs, remove green beans
and put on top of lemon slices
-Put potatoes in olive oil mixture and toss. Use
tongs and put potatoes along inside edge of pan, on
top of the green beans
-Put chicken in oil bowl and coat
-Put chicken (skin side up) on top of dish
-Pour any olive oil mix on top of chicken
-Roast 50 minutes and remove chicken
-Put beans and potatoes in for 10 more minutes
-Divide chicken and beans/potatoes mix on each plate
and serve
