-Preheat 375 degrees
-Mix 3 tbs. EVOO, salt, pepper, orange zest and
rosemary in small bowl
-Rub mix all over pork and put in glass pan
-Cover and marinate 20 minutes
-Heat remaining 3 tbs. EVOO in skillet over medium
high heat
-Add pork and sear each side until browned on each
side
-Put pork in glass pan, cover and roast about 15
minutes (165 degrees inside middle of meat)
-For sauce, while pork is baking- Pour off cooking
fat from skillet leaving browned bits in pan and
heat over medium high heat
-Add shallot and wine, cook until most of wine has
cooked off, scraping bits off pan
-Add broth and cook till reduced by 1/2
-Remove from heat, stir in butter
-Stir in vinegar, rosemary, orange zest, salt and
pepper
-Let pork sit 10 minutes before cutting in
-Drizzle pork with sauce and serve
