Saute the onion in olive oil in a large saucepan over medium-high heat until translucent.
Add the ginger, coriander, cumin, garlic, and bay leaves - saute for one minute.
Add the water, lentils, and salt and bring to a boil. Cover, reduce heat, and simmer 15-20 minutes or until lentils are tender. Discard bay leaves.
Place 1/2 cup rice in shallow bowl, sprinkle with a little lime juice and spoon 3/4 cup of lentil misture over the rice. Sprinkle with cilantro if desired.
