Heat oven to 400 degrees. In a large skillet, cook
sausage and zucchini until sausage is no longer
pink. Drain off fat. Stir in marinara sauce and
bring just to a boil. Layer meat sauce on the
bottom of a 10-inch square baking dish. Follow
with a layer of polenta, topping each piece of
polenta with ricotta cheese. Sprinkle mozzarella
cheese over the entire layer. Repeat the layering
process, starting with meat sauce. Bake uncovered
for 20 minutes or until heated through. Let stand
10 minutes before serving.
