Layer all the ingredients into the crock pot with
the pork on top. Add salt and pepper to taste. Cook
for about 6 hours on high. When done, the pork
should be tender and falling apart. Shred pork with
two forks.
I use this for tacos or burritos or served over
rice. A 4 lb. roast makes a ton of meat. I usually
use a smaller piece of pork tenderloin which is
leaner.
