Dissolve yeast and 1 Tbsp. sugar in lukewarm water. Scald milk and shortening. Add sugar, salt and beaten eggs to milk mixture. Add some flour to cool misture, and then add yeast mixture. Continue to add flour until dough can be handled. Knead lightly on floured surface. Make a ball and place in greased bowl. Cover and let rise away from draft until doubled. Punch down and let rise again. When light, punch down again and roll the dough into rolls. Cut into triangles and roll up. Brush with melted butter. Bake at 400 degrees for 15 minutes.
