Blend zucchini, eggs and oil in food processor until liquid. Add dry ingredients and vanilla (except walnuts and brown sugar) in separate bowl. Add slowly to liquid mixture, continuing to mix at low speed. Grease and flour loaf pans on all sides and bottom. Chop walnuts fine, and mix with some brown sugar and set aside. Bake at 325 degrees for 55 minutes. At 20 minutes into baking cycle, open oven, and sprinkle and press walnuts and brown sugar into top, making line down the middle.
