2 tblsp evoo
|

1 lg onion, chopped
|

4 lg garlic cloves, minced
|

1 lb chicken breast, cubed
|

3 cans cannellini beans
|
|
1 can (7oz) green chilies
|
|
grated sharp cheddar cheese (garnish)
|
|
1 tblsp ground cumin
|
|
1 tsp dried oregano
|
|
|

1/2 tsp anise seed
|
|
1/2 tsp dried red pepper
|
|
1 cup chicken broth
|
|
1/2 cup whipping cream
|
|

|

Instructions |
|
|
1. Saute onions, garlic, cumin, oregano, anise, and pepper in evoo
for 5 minutes.
|
|
|
2. Push aside and add chicken. Sautee for another 5 minutes or
until chicken is cooked through.
|
|
|
3. Add beans with liquid, broth, chilies and cream. Simmer until
chicken is tender, about 10 minutes.
|
|
|
4. Top with cheese to garnish.
|
