4 eggs 1 1/2 - 2 c. grated cheese (such as cheddar, Colby, or Colby-jack)
Instructions
Combine the dry and wet ingredients and pour into a 1 1/2 qt casserole dish. Sprinkle another 1/2 c. cheese on top, if you want. Bake at 350 degrees for 30-35 minutes.
It's much lighter than regular cornbread, due to the extra eggs...somewhere between cornbread and a quiche.
