Preheat oven 350 degrees.
In large bowl, combine the flour, baking soda, salt and nutmeg; set aside.
In another bowl, beat eggs, sugar and oil.
Stir in apples, nuts, coconut; mix well.
Stir in dry ingredients just until moistened.
Pour into muffin tins (greased) or paper cups.
Bake 25-30 minutes or until wooden stick inserted in center comes out clean.
Move to wire rack; Cool in pan.
