Blend flour, salt and soda; mix well.
Add sugar, shortening, egg and molasses; Stir until smooth.
Blend in oatmeal. Mix well.
Roll dough out 1/8 inch thick on lightly floured board; Cut with 2 1/2 inch round cutter.
Place half the rounds on ungreased baking sheet.
Date Filling-
Cut up pitted dates to make 1 cup.
In saucepan, boil dates, sugar and water until thick, stirring constantly.
Stir in 1/2 chopped nus.
Cool before using.
Preheat oven to 375 degrees.
Place half the rounds on ungreased baking sheet.
Spread them with 1 tsp filling lightly on center of each cookie.
Cut a cross or other pattern on remaining rounds.
Place over filling topped rounds; Seal edges.
Bake 12-15 minutes or until lightly browned.
Alternative filling if don't like dates/raisins-
Pumpkin filling- Mix 1 cup cooked or canned pumpkin, 1/3 cup sugar, 1/2 tsp cinnamon, 1/2 tsp ginger and 1/4 tsp nutmeg until smooth.
Follow spreading instructions as before.
