Trim the chard adn separate the leaves from the stems. Cut the chard stems into 1 inch pieces and the leaves into smaller pieces. Heat the butter adn olive oil in a saucepan over med heat. Stir in the shallots. Cook until slightly softened. Add teh mushrooms. Cook until tender. Add the chard stems and water or stock. Simmer, covered, for 10 minutes or until tender. Add teh chard stems and water or stock. Simmer, covered, for 10 minutes or until tender (the timing may vary, so check often). add the chard leaves. Simmer, covered until tender. Uncover and increase the heat. Cook until some of hte liquid has evaporated. Season with salt and pepper. Next time use spinach instead of the Swiss Chard.
