LOW-FAT, LOW-CARB, LOW-CALORIE APPS PACKED WITH
VITAMINS!
Prep-
- Slice 4, 1cm pieces of eggplant
- Rub Eggplant with course salt, let sit for 5-10 mins, wipe or
rinse excess salt.
-1/4 cup kale (cut into small pieces)
-1/4 cup spinach (cut into small pieces)
- Steam Spinach and Kale together
- 4 slices of Zucchini (.5 - 1 cm)
- 2 slices of Hot House Tomato (.5 - 1cm), cut into quarters
- 2 slices of swiss cheese (.5cm), cut into small pieces.
- Sprinkle Dill seasoning and lemon juice onto Salmon, place
Salmon on grill (I use George Forman)
After Salmon, if used, is half cooked; place Eggplant & Zucchini
on grill. Lightly grill
Remove Eggplant and Zucchini.
-Stack (in this order)-
Eggplant, steamed spinach and kale, swiss, tomato, zucchini.
Place stacks on grill approx 1 minute, or until cheese is melted.
Remove. Place piece of Salmon on top if desired.
