Oven to 475 degrees. line a baking sheet with parchment paper or foil. Mix together pizza crust mix, 1/4 c parmesan cheese, salt and optional pepper. Add warm water and olive oil. Stir until blended. place the dough ball into a lightly greased bowl, cover with plastic wrap and let rest for 5 minutes. Transfer dough to a lightly floured surface and roll into a 9z12 rectangle. Dough may need to relax for a few minutes during the rolling process. Brush surface of dough with the egg white. Combine remaining parmesan and paprika in a bowl. Sprinkle over dough, pressing it into the dough with a rolling pin. Cut dough into 18 equal strips. Roll each strip back and forth between your hands, forming thinner strips. The strips will lengthen as they are rolled. Place 3 strips side by side on the baking sheet. Braid strips together, starting in the middle and working down. Pinch dough together at the bottom and tuck end under. Braid the top portion, pinching and tucking the end under.
