Hints- a variety of easy-to-manouver shapes add visual interest to vegetable trays. For best results, vegetable trays can be prepared several hours in advance and covered with damp paper towels and plastic wrap. Or, to prepare one day in advance, wrap the prepared vegetables in damp paper towels adn place in plastic bags, then into the fridge.

Green and White Vegetables
cauliflower florets, zucchini sticks, jicama sticks, Belgian endive spears, Anise (also known as fennel) sticks, broccoli florets, asparagus spears, grean beans.
Antipasto Plate- zucchini sticks, trimmed scallions, red or yellow teardrop tomatoes, green or black olives, marinated artichoke hearts, peels of parmesan cheese or rolled sliced provolone cheese, bell pepper slices, stuffed hot peppers.
