pineapple, trimmed, cored, cut into 1 1/2 inch pieces
cantaloupe and honeydew melon, peeled, seeded and cut into 1 1/2 inch chunks
juice of one lime, per 20 skewers
1 T chopped fresh mint leaves, per 20 skewers
6 inch wooden skewers
Instructions
Choose 3-4 fruits listed. Thread pieces of each fruit to fill 6 inch wooden skewers. These can be assembled 2-3 hours before serving, covered with damp paper towels and placed in the fridge. arrange the skewers on a serving tray. Squeeze lime juice over each skewer and sprinkle with the chopped mint leaves. Note- The fruit pieces may be prepared the night before. Place the pieces on a tray lined with plastic wrap in a single layer and drape with damp paper towels. Cover well with plastic wrap and refrigerate.
Good Idea- Party guests love fruit skewers because they are fresh and colorful; you'll love them because you can make a variation of this recipe and freeze them teh night before. Fruits sucha as pineapple, mango, bananas and papaya can be cut into pieces, skewered and froze. Defrost the skewers for about 10-12 minutes before serving. Arrange the fruit skewers on a protector lined Small Serving Tray Basket, and the will be perfectly thawed just in time for your guests' arrival.
