2 - 15.5 oz. cans garbanzo beans, drained and rinsed
1/4 cup lemon juice (add more if needed to right consistency)
4 T. tahini
2 tsp. salt
black pepper to taste
2 T. olive oil (add more if needed to right consistency)
Instructions
Add all ingredients to a food processor and blend until smooth. Add more olive oil and/or lemon juice until you have the right consistency. Not too creamy but definitely NOT dry!
Transfer to a serving dish.
Drizzle some olive oil and parsley flakes on top for garnish and serve with fresh vegetables (carrots, celery, broccoli, cauliflower).
