8 oz. small shells or macaroni pasta, cooked al dente and drained
2 tsp. olive oil
2 eggs
1 tsp. salt
1 tsp. pepper
1T Italian seasoning blend
1 c thawed frozen peas/shredded carrot
1 c salami or pepporoni, chopped
1 c santa tomatoes/bell pepper/zuchinni, chopped small
1/2 c spaghetti/marinara sauce
1 c favorite shredded cheese
12 cupcake liners
Instructions
Line 12 cup muffin tin with liners.
In medium mixing bowl, combine drained pasta, olive oil, egg, Italian seasoning, salt and pepper.
Mix well to fully distribute eggs and spices throughout pasta.
Fill each muffin liner half full with pasta.
Let kids select their favorite combinations of toppings and load up to 3/4 full per cup.
Top each with 1T. tomato sauce and sprinkle with cheese. Bake @ 350F 10 - 12 min., until
cheese is fully melted and lightly browned on edges.
