|
Half the tomatoes and onions and lay cut side up on a cookie sheetalong with the peppers and garlic.

|
Roast at 375 until onions look nice and translucent, tomatoes look soft, and peppers are getting nice and char on them.
|
|
|
Let it all cool a bit, then run through a food processor with salt and cilantro (may need to do in two baches)
|
|
|
Stir it all together and eat. Makes a large mixing bowl full of salsa.
