Mix yeast, 2 cups lukewarm, and sugar. Set aside for 5 minutes. Add egg and mix with whisk. Add flour and oil. (Batter will be thin.) Pour into container, cover and refrigerate until ready to use. When ready to bake, preheat oven to 375 degrees. Spoon batter into sprayed muffin cups about half full. Bake for 7 to 8 minutes.
