1 Pound dipping chocolate or confectioner's coating
Instructions
Drain cherries thoroughly on sheets of paper toweling ( several hours or preferably overnight).Cut cherries in half.
In a small bowl, combine softened butter and corn syrup. Add confectioners sugar to this butter and corn syrup. Mix well, I added some juice from the cherries and also about 2 extra tablespoons of light corn syrup. The mixture will look like thick pink frosting.
Melt chocolate in the microwave 1 cup at a time for about a minute. Stir it until smooth. Follow your instructions for coating your chocolate cordial's candy mold. I bought two molds which make 12 candies at a time. I put my chocolate in the mold, place it in the freezer then take my other one and do the same. (I do this to save time. It's kind of like what Martha does on her show.) When that one is done, I put that in the freezer and remove the first one from the freezer. It's time to take the cherry, dip it in the confectionary mixture then place in the candy mold. Do this for each. Then take your chocolate and completely cover the tops of the cherry and mixture to seal the chocolate. You can now place it back in the freezer for about 10 minutes until chocolate has hardened.
