This recipe makes 5 cups stuffing. Allow 3/4 cup
stuffing for each pound of poultry. A one-lb loaf of
bread yields 8 cups of bread cubes. I usually triple
this recipe for a 21-22 lb turkey. There's enough
for the turkey, and for a side casserole.
Cook and stir celery and onion in margarine in dutch
oven until celery is tender; remove from heat.
Stir in remaining ingredients. I typically add some
poultry seasoning until everything smells right.
It's trial and error.
