Peel eggplant
Quarter and slice an opening along the long edge for stuffing
Salt and let stand for one hour
Place in pan in 350 degree oven with small amount of oil
Bake until tender.
Saute beef, onion, salt, snoubar, garlic salt, pepper and cinnamon
until done.
Stuff eggplant quarters.
Cover with sauce.
Cook in 375 degree oven until sauce thickens.
Serve over rice.
