Preheat oven to 400 Degrees. Bring water to a boil
in large, deep pot. Add salt and rice. Boil for 9
minutes. Drain in wire sieve and rinse with cold
water. Drain again. Set aside.

Remove sausage from casings. if necessary and break
in to small pieces. Saute over medium heat until
browned and barely cooked through. Add chopped red
peppers. Remove from heat and stir in rice and
cheeses until cheese melts. Cool

Coat a 13 by 9 cake pan with cooking spray. Stuff
sausage mixture into whole peppers and place
peppers upright in the pan. Sprinkle bread crumbs
over top of peppers. Cover with foil and bake for
45 minutes. Remove foil and bake for an
additional 15 minutes or until the surface is
golden brown. Serve right away.
