Slice flank steak into thin strips. Mix egg, salt,
pepper,sugar, cornstarch and peanut oil (1 TBS).
Toss steak to coat and set aside, covered, at room
temperature. Marinate for 20 minutes.
Mince one scallion fine. Mince the garlic and
ginger while it marinates. Slice remaining
scallions into 2-inch pieces.
Mix soy, sherry, hoisin and water. Set aside.
