Melt the butter in a small frying pan. Add the
garlic and mushroom and soften for 3 minutes
Heat a griddle pan until smoking.
Drizzle the ciabatta with the olive oil and season
with salt and freshly ground black pepper. Griddle
for 2 minutes on each side
Place the softened mushroom on the ciabatta. Lay the
brie over the mushroom and grill for 5 minutes until
melted. Sprinkle with chopped chives to serve
