1 small red or green bell pepper, chopped (about 1/2 cup) (WIC food)
1 medium carrot, chopped (about 1/3 cup) (WIC food)
1 small onion, chopped (about 1/4 cup) (WIC food)
1 can broccoli cheese soup
1/2 cup milk (WIC food)
1/4 cup grated parmesan cheese
6 lasagna noodles, cooked and drained
1 1/2 cups mozzarella cheese, shredded (WIC food)
Instructions
In medium saucepan place broccoli, pepper, carrot and onion. Cover with water. Over medium high heat, heat to boil, Reduce heat to low. Cover and cook 5 minutes or until tender. Drain.
In 2 qt shallow baking dish spread 1/2 cup soup mixture. Top with 3 lasagna noodles, 1/2 cup soup mixture, 3/4 cup mozzarella cheese and 1 1/2 cups vegetable mixture. Repeat layers. Top with remaining soup mixture. Cover.
Bake at 400 degrees for 20 minutes. Uncover and bake 10 minutes more or until hot. Let stand 10 minutes.
