½ cup dried cranberries (soak in chicken broth for one hour)
½ cup chicken broth
¼ cup olive oil
2 cups chopped onions
1 cup chopped celery
2 apples chopped in 1 inch cubes
½ cup of Italian chopped parsley
1 loaf of GF bread in 1 inch cubes
2 eggs
1 tsp salt
Instructions
Soak cranberries in chicken broth for one hour.
Bake bread crumbs on parchment paper in oven for
5-10 minutes at 350 degrees F. Let cool.
Heat oil in skillet. Saute onions, celery, apples, and parsley. Transfer
mixture to bowl. Stir cooled bread into veggie mix.
Whisk eggs and salt in cranberry broth mixture. Add egg/cranberry mix to
stuffing and stir.
Bake 40 minutes at 350 degrees F. Serve.
