Preheat oven to 400 F. If using whole cauliflower cut into florets and cut stems into 1 inch pieces. Brown butter in a large ovenproof skillet over medium-high heat for 2 minutes until bubbly. Add the olive oil and sage, stir to combine. Add the cauliflower, salt and pepper, stir to coat cauliflower with seasonings. Immediately transfer to the oven and bake for 30 minutes, turning and stirring pieces at least once. The cauliflower should have some brown edge. Serve.
