preheat oven to 100c 215f for conventianal oven, season ribs and split 12 each into 2
roasting tins meat side down and place in oven.
to make bbq sauce, gently heat a drizzle of olive oil in a medium pan and cook garlic for
a
couple of mins to release the flavour. then add the passata sugar honey and stir till
sugar is dissolved. add the remaining ingredients and simmer gently until thickened
slightly, about 20 mins then leave to cool.
after 3 hours drain of the fat from the tin turn over ribs and brush with bbq sauce, keep
brushing every half hour for next 3 hours, then take out of oven drain of fat again and
turn it up to 200c. devide sauce over the ribs and put back in the oven for 20 to 30 mins
depending on how thick and sticky you like your sauce,
Alternatively as the sauce is a strong flavour, you can make the sauce first and just
keep brushing the ribs from the start of cooking, then save what sauce you have left.
