2. Rub potatoes with a bit of olive oil and lightly skin skins.....
Bake 35 to 40 minutes
3. Cut potatoes in half and scoop out the warm flesh into a bowl.....
Add milk, butter, cheese and scallions and stir until smooth.....
Season with salt and pepper
4. Preheat broiler.....
Scoop the contents into the potato skins.....
Top with extra cheese and brown for 3 to 5 minutes.....
Mix the jalapeno with sour cream and place on top of each
potato finish with bacon
