1. Heat oven to 350 degrees.....
Place ramekins in a large pan
2. In a small bowl, beat egg yolks.....
In a large bowl, stir whipping cream, 1/3 cup granulated sugar
and vanilla.....
Add egg yolks, beat until evenly colored then pour into ramekins
3. After placing the pan in the oven pour enough boiling water
into the pan until the water covers 2/3 of the height of the
ramekins.....
Bake 30-40 minutes.....
Remove ramekins to cooling rack and cool for 2 hours.....
Cover tightly with plastic wrap and refrigerate for at least 4
hours
4. Uncover ramekins and gently blot any liquid from the tops with a
paper towel.....
Sprinkle sugar over each custard and caramelize the sugar or brown
sugar in the broiler
