Heat oil in large pot, add onion, sauté till soft.
Add garlic, potato and 2 cups water or broth. Add a few pinches of
salt and pepper. Bring to a boil over med-high heat, cover and
simmer till tender (30 minutes).
Stir in 2 cups water/broth and beans, puree till smooth in a
blender.
Stir in cabbage, turn down heat, cover and simmer for 10 minutes.
Top with parm and parsley.
