Preheat oven to 350 degrees.
Place 3 asparagus spears in the center of each flattened breast and top with 1/4 cup of cheddar.
Bring in sides of chicken and then tie with 1 or 2 pieces of kitchen string.
Season to taste with lemon pepper and place in a baking dish.
Add 1/4 inch of water to the dish, cover and cook 20 minutes then remove cover and cook for 20 more minutes or until chicken is done.
Use white wine in place of the water for an excellent flavor if desired.
