3 eggs

1 cup oil
|

2 cups sugar

2 cups peeled and grated zucchini
|

3 tsp. vanilla

2 tsp. cinnamon

1/2 cup nuts

3 cups flour
|

1 tsp. baking soda
|
|
|
|
1 tsp. salt
|
|
1/4 tsp. baking powder
|
|
1 tsp. ground nutmeg
|

1 cup drained crushed pineapple (opional)

Instructions |
|
|
Stri together eggs, oil, sugar, zucchini, & pineapple.
|
|
|
Sift togehter flour, soda, salt, cinnamon, baking powder, and nutmeg.
|
|
|
Add zucchini mixture. Stir in vanilla and nuts.
|
|
|
Bake at 325 degrees for 1 hour (check with toothpick to see if done, may need to cook another 15 minutes).
