Pierce sweet potato with fork and microwave until cooked
through (about 5-6 minutes; time will vary depending on
microwave).
Blend cottage cheese in a blender.
Heat pan over medium-low heat. Place blended cottage cheese,
black beans, and cumin in pan. Cook until warm,
stirring constantly.
Slice potato in half. Pour bean and cheese mixture in potato.
Stuff potato with remaining ingredients.
