Heat oil in lg sauce pan over med heat. Add onion and cook stiring for 8 min until ome bits are golden brown. Stir in flour and cook 1 min.

Slide pan off heat. Whisk in slowly 1/3 box broth unti mooth. Then add remaining box broth canned broth and wine. Return to heat bringing to boil stirring frequently. Add carrot celery mushrooms thyme and bay leaf..

Reduce heat and simmer uncovered. Stir occasionally and let gently bubble for 20-25 min or until reduced and thickened.

Strain to remove solids. Stir in pepper taste and add salt if needed. Makes 5 cups. Have not made this yet but thought it was worthy of keeping till needed.
Have made the beef version and have to say for a gravy that never saw meat not bad. I did throw in dried mushrooms as well for a little earthier flavour..also have added 1/4 cup of red wine to the beef gravy. We like our gravy a little thicker so have bumped flour to 3 T
