1.5 cups cooked chickpeas (cook dried chickpeas night before)

1/4 cup vegan mayonnaise

1/3 cup minced celery

2.5 T minced dill pickle (about 1 pickle-slice, give or take)

1 scallion, chopped

1 tsp soy sauce

Pepper to taste

Instructions |

Mash the chickpeas coarsely with a fork. Mix in the
